hashbrown casserole recipe

 

I am sure most of you have your own version of this but this is the basic..I usually use cream of mushroom soup instead and just double up to make a bigger casserole..the trick is to give all the ingredients a good stir to mix them all up before you top with the cornflakes and bake...

HASHBROWN POTATO CASSEROLE  

2 lbs. frozen hash browns, Southern style (thawed)
1 stick melted butter
1 tsp. salt
1/2 tsp. pepper
1 can cream of chicken soup
1 pt. sour cream
1/2 c. chopped onions
10 oz. pkg. shredded cheddar cheese

TOPPING:

1 c. crushed corn flakes
3 tbsp. melted butter

Preheat oven to 350 degrees. Mix all ingredients. Arrange in baking dish, 9 x 13 inches. Sprinkle with corn flakes. Top with butter. Bake for 1 to 1 1/2 hours.

Serves 8.

This is the recipe (more or less) we use for the football team dinners we have every Thurs during football season. The boys love them...  we double the recipe anywhere from 6-8 times...lol, and the pans are emptied every time

OMG we make this all the time. Only I switched it to the shredded hash browns the last few times I made it because my kids don't like the green pepper and onions. I love this stuff. I took it to a party once and people actually made fun of me because of the corn flakes on top...I was horrified then I thought...oh well more for me!! lol They don't know what their missing.

I make this but with bell peppers, onion, bacon bits and sour cream, never thought of chicken soup and cornflakes...yummm

I use cream of mushroom soup instead, too, and I love to use Kroger-brand potatoes O'Brien because they already have the onions and green peppers in them.  I've never made a topping for mine, though.

Sounds great and I'll have to try it!!! Thanks for sharing!  I'm cooking alot of stuff for Thanksgiving cause, about half of the kids are coming, besides the 2 who still live here, and we think it may be 15 people eating...reminds me of the mealtimes about 4 years ago before they started leaving the nest! ( I'll let you know how it turns out...I've gotten a little rusty in the kitchen, but I used to be a great cook, can't wait to try it!) Love2U

That is one thing I really miss over here, the convenience of frozen hash browns.  I still make this casserole, but I end up boiling potatoes and chopping them up instead.  Not quite the same but good nevertheless!

I make this, but mine don't like the cornflakes on top so I just top with extra cheese. We love this.
